Giftcakes (from the 12/09)
So what do you get a coworker for secret Santa when all you know about them is they are vegan and look a lot like teen wolf?VEGAN CUPCAKES! (and some novelty pens...)
So these are Chocolate chocolate chip cupcakes with berry cream cheese chocolate chip frosting and Vanilla cinnamon cupcakes with applebutter cream cheese frosting (all vegan)!
So here is what you'll need for the Chocolate chocolate chip.
1 cup. Vegan chocolate chips (I like to use minis in cupcakes because the size is better but whatever you want)
1 1/2 cups of flour
1 cup of sugar
3 tbs. dark cocoa powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla
1 tsp. vinegar
5 tbs. veg. oil
1 cup cold water
(I use this basic chocolate cake recipe for almost everything because it's so good and easy to fancy up.)
For the Berry cream cheese frosting,
1/2 a container of Vegan cream cheese
about 1/4 cup of Berry preserves (I think raspberry is best but anything will work)
1/4 cup of vegan chocolate chips
3-4tbs Vegan powder sugar (and yes not all powdered sugar is vegan)
So line your pan, pre-heat the oven to 350, put all the cake ingredients in the mixer and mist it smooth, then add the chocolate chips and mix till they are evenly distributed (this batter is thin, so don't get freaked out)
Fill your pan so each cup is 3/4 of the way full maybe a little more, and bake for 15-20min.
wail that's baking put the powdered sugar cream cheese and jam in the mixer, mix it all up, stir in the chocolate chips and refrigerate.
when the cup cake are cool you can frost them but then cover them and put them back in the fridge because the vegan cream cheese tends to get very runny.

I hate my roommate cupcakes

Hey hey hey, so these cupcakes aren't for sharing especially with your stupid, messy, selfish, irresponsible roommate...or any other dumb people HAHAHAHAHA!
Yeah I know that's kind of not nice...but sometimes it's okay to not be nice and sometimes it's okay not to share!
So put on some angry music grab a bottle of rum and here we go...
what you'll need:
2 bars of Lint chocolate with chili (other brands work but I think Lint is the best...also its not too spicy, it just has a creamy warm taste mmmmm...)
1 1/2 cups of flour
1 cup of sugar
3 tbs. dark cocoa powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla
1 tsp. vinigar
5 tbs. veg. oil
1 cup cold water
(although the actual cake is vegan, these cupcakes are not, because of the lint chocolate and because we are topping them with whipped cream.)
For the whipped cream:
1 cup heavy whipping cream
1/4 cup sugar
1 tsp. vanilla
So now that you have everything together pour another drink, get out the cupcake pan put in the liners and pre-heat the oven to 350.
Take your first chocolate bar and melt it, (in the microwave for 30sec. at a time or dubble boil it on the stove). but the melted chocolate in a pastry bag with a fine tip (if you don't have one a plastic baggie will do or you can even use a spoon.) on a cookie sheet covered with wax/ parchment paper make small designs then freeze.

Another drink and then, take the other bar of the chocolate and chop it into fairly small peaces. (I like to grate it sometimes to almost a powder but if you want more of a chocolate chip affect that fine too)
set that aside and make your cake, put all the dry ingredients in first, then the wet...this is a super easy cake you don't have to worry too much about the order things go in all all that junk.
mix the batter till the chunks are gone, it will be very liquidy. dump the chocolate peaces in and mix it up.
fill your cupcakes 3/4 of the way full so that they have a nice round top...unless you're DJ Jazzy Jeff flat tops are lame. bake them for about 15-20 min. (you will be able to smell them when they are done and the toothpick should come out clean.)
We are frosting these with whipped cream and the chocolate designs we made. Whipped cram is easy but you don't want to make it until you are ready to eat it so when you are just dump the cream, sugar and vanilla in the mixer and whip it.
Top you cooled cupcakes with whip cream and chocolate designs and enjoy (alone) ha.

Hey hey!
FINALLY!!!!
Yes the Blog is finally up, I know many of you have had to hear me talk about this for a very long time and well pigs are flying all over the place and the blog has been created!
For anyone who doesn't know what this is all about here is the short version of a short story, I love Cupcakes! I love making cupcakes, especially vegan cupcakes. So this is pretty much a blog about me making cupcakes, some of my own recipes, some experiments, and some of the best from the books.
Thanks to everyone who reads this, and to anyone who I make eat the cupcakes I make.
I will have recipes up soon (with some photos), and then regular posts after the back catalog is up, hopefully 2 or 3 a month (fingers crossed).
